I have a passion for cooking and feeding people exciting plant-based food, which led me to opening Happy Buddha, a plant-based eatery located in Shanghai, China. While running Happy Buddha, I learned so much about life. I learned how to feed people vegan food they loved, even if they weren't vegan. I learned about community and how amazing and supportive the right one can be to help you follow your dreams. I also learned about how to make very difficult business decisions. All of this was happening while I was at first still working full time as an international school teacher and having two baby boys! To say was an exciting time does not fully express what an amazing and insane experience it was. In the end, various circumstances and the importance of raising my family led to the tough decision to close Happy Buddha, but the impact of our little vegan eatery and it's spirit still live on in Shanghai and this blog.
Although Happy Buddha is no longer running, my commitment to sharing plant-based living with you will never stop! This blog is a love letter to my family, the community, and the beautiful food the Earth has to offer.
Now we have embarked on another (surprise) adventure of living in the Philippines. In July of 2020, due to complications caused by the pandemic, we were forced to pack our home and make the decision to leave China. We don't know what the future holds, like so many of you now, but we must embrace it and make the most of it!
