Mama’s Quick and Easy Marinade
What did the veggie say to the barman?
“Gimme the sauce.”
Because in this imaginary scenario in my head the bar is actually a sauce bar, not a bar, bar. Although alcohol in sauces is sometimes a very good idea, and good sauce on vegan bar food is ALWAYS a good idea. What I am really trying to say here is that I love sauce, you dig?
Some people say that food is simply a vehicle for the *actual* good stuff, like dressings, sauces, and such. I tend to agree. Sometimes though, when the sauce is so good, it takes the food it’s hitching a ride on to the next level. This, my friends, is one of those sauces.
Not only does this sauce taste amazing on it’s own, the real magic is its ability to transform the food it’s on. It’s especially magical when applied to veggies pre-grilled on the BBQ as the crispy charred bits are really the best things ever.
This sauce is the fairy godmother to my cauliflower. It’s the kind of thing that you can put on your grilled veggies, seitan, tofu, what have you, that will make everyone wonder what took them so long to fall in love with plants! Seriously, slather this stuff on everything during your next cookout and watch as the crowd delights in the charred and wonderful goodness.
This is a super quick and easy recipe you’ll want to use again and again. Just whip up a batch, let your veggies or protein soak it in for a while, then cook however you choose- roast, pan fry, or BBQ. It’s all easy, and it’s all good!
Mama's Marinade
Ingredients
- 1/3 C lemon juice, freshly squeezed
- 1/3 C low sodium soy sauce
- 1/3 C cup olive oil
- 1/4 C vegan Worcestershire sauce
- 3 tbs fresh parsley, stems removed OR 1.5 tbs dried parsley
- 1/4 C packed fresh basil leaves OR 3 tbs dried basil
- 1 tsp ground white pepper
Instructions
- Whack everything in a blender together and blend on high until the mixture is smooth and well combined. If it's too thick for your liking, you can add a couple of tablespoons of filtered water and blend again.
- Place in a shallow dish and mix in the veggies or protein you would like to marinate, coating all parts of the veg or protein.
- Refrigerate for at least an hour, or overnight for extra tasty effect.
- Grill, roast, or pan cook your marinated goodness and serve. Prepare for smiles and recipe requests.
