Kid Friendly Vegan Mac n’ Cheese and with Veggie Dogs
I have had a few people reach out to me recently to ask about raising kids vegan or vegetarian, and about what the heck to feed their kids!
One thing I DO know is that growing up, every single kid I knew loved mac and cheese and hot dogs. Little did we know we were eating milk meant to be reserved for baby cows and pig butts, but ignorance is bliss as they say.
Fortunately I have learned all about the horrors of the animal agriculture industry, so I shall pass on this knowledge to my children. This means they will not get to eat the same food I ate as a kid, but they WILL be able to eat the next best thing, minus the nastiness.
So, here is one recipe your kids will love. As proof I will show you a photo of lil’ dude digging in. Full disclosure-he eats everything.
Vegan Veggie Dawg Mac n' Cheeze
Ingredients
- 2 of your fave veggie dogs, browned and sliced
- 1 package cooked pasta (macaroni or whatever, it will cook more pasta than you need but you might need that leftover pasta for tomorrow's breakfast)
- 1 medium tomato, chopped small
- 1 medium carrot chopped small
- 1 white potato chopped small
- 1/4 C coconut cream (milk will work too, but it will be more coconut-y)
- 1/4 C raw cashews
- 3 tbs. nutritional yeast
- 1 tbs. tapioca starch
- 1 tsp. apple cider vinegar
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 3/4 tsp. salt
- pepper to taste
- jalapeño slices for the ladies and gents, coz we like mac and cheeze too
Instructions
- In a medium saucepan add carrot, potato, and cashews. Cook 15 minutes until carrots and potato are tender.
- Drain and add to high powered blender. It's OK to let some of the cooking liquid dribble in.
- Add remaining ingredients to the blender (minus veggie dogs and other stuff unless you are on a liquid diet). Blend on high until smooth.
- Pour liquid cheeze into saucepan and heat over medium heat. Heat and stir and heat and stir until that cheeze is glossy and creamy, about 4 minutes.
- Add enough cooked pasta to coat evenly. Stir in chopped tomato.
- Add mac n' cheeze to bowl and top with veggie dog and jalapeño.
- Prepare to cry tears of joy.
